  • A Nordskov first - a decaffeinated coffee! After years of searching, we found a decaf we love and could do justice by on the roaster. It’s so good we couldn’t tell it from non-decaf coffees when we cupped it blind. Expect notes of graham crackers & lemon meringue in this washed coffee from ASOMUJER (Asociación de Campesinas del Sur del Huila), an association of women producers located in the Timaná municipality in Huila, Colombia.

  • This decaf is processed using ethyl acetate (EA), a naturally occurring compound found in fruits like bananas and created during the fermentation of sugar.

    Here’s how it works:

    Green coffee beans are gently steamed to open their pores. They’re then rinsed in a solution of water and ethyl acetate, which selectively bonds with the caffeine and removes it. This process is repeated until the caffeine is no longer detectable.

    Afterward, the beans are steamed again to remove any remaining traces of EA, then dried and polished before export.

    Ethyl acetate is used because it targets caffeine specifically while preserving the coffee’s original flavor character. The result is a decaf that still tastes like coffee — balanced, expressive, and true to its origin.
